Happy Birthday to me! Here's the cake I made for my 21st birthday. I took inspiration from Hand Made with Love's Peacock tutorial and altered the design of the feathers and colors to create a pheonix for myself. I love all things fantasy and since I've previously made a dragon, I wanted something new and special for myself. The entire pheonix is made of gumpaste, cut and painted by hand.

The cake is a chocolate stout, with orange chocolate mousse filling and orange swiss meringue buttercream. This was my first time trying the SMB and I love it. Of course, I've never liked American Buttercream.

Overall, I am so ridiculously happy with the way this turned out!

Absolutely beautiful cake!  I love the way you posed the Pheonix and have it wrapped around the cake like that.  The colours are vibrant and eye-catching.  The head and the bird in general is very streamlined and elegant, not chunky.  I'd love to get your recipe for the orange chocolate mousse filling and the buttercream . . . they sound fantastic.  All over, it sounds absolutely delicious!!!  I can't believe that you actually cut into it to eat it!!!  I have never cut into one of my cakes . . . after all that work, just can't bring myself to do it.  When I watch someone else cut into it, I cringe a little inside.  lol    AWESOME WORK.

Thank you so much for all the kind words! I was so unbelievably pleased with how this cake turned out. I actually saved the gumpaste pieces so that I can try and reassemble it on a display cake haha. I love seeing people enjoying my cakes, both visually and again when they actually taste it. I'm sad when my cakes don't get eaten!

The SMB recipe I used was from cake central. I just added about a teaspoon of orange extract. Here's the link! cakecentral.com/a/the-well-dre…

I honestly can't remember the details of my chocolate mousse, I kind of just made that one up.

Thanks for the link to cake central.  I used to go on there all the time but have been so busy of late . . . . you know how it is.  I would have saved the pheonix as well!  Hahaha  Hug
